Collecting Mesquite at Starry Night Retreat
Have you ever had mesquite-smoked… well, anything? If you have, you know how delicious it is! In fact, it’s such a sought-after wood that people attempt to mimic its flavor in spices and the wood is in high demand in grocery stores!
And guess what? The land surrounding Truth or Consequences, New Mexico is FULL OF MESQUITE. You better believe we use that to our advantage.
Our Executive Director, Monika Proffitt, took the Starry Night artists in residence out for a day of mesquite collecting. She explained how to find it, and how to differentiate it between other desert foliage. She made sure to warn the artists about mesquite’s hardcore thorns, and cautioned everyone to wear gloves. And, she did it all in a miniskirt!
A pretty successful day, and only one small casualty…
The residents had a wonderful, informative, and productive day out in the enchanted New Mexican sun.
And at the end of the day, they enjoyed some amazing mesquite-smoked ribs, while relaxing under the crisp night sky.
Being surrounded by new friends after a day out in the sun, a big plate of ribs is enough to make life feel complete.
